I like baked whole fish. Bought a super fresh striped sea bass from Whole Foods Market. The fish is about 1.5 pounds. Ask the salesman to butterfly the fish.
1. Season the cavity and exterior of fish with salt, pepper and lemon juice. Cover with plastic, and refrigerate for at least 1 hour.
2. Preheat oven to 450 degrees.
3. Lightly spray a baking sheet with no-stick cooking oil. Place 2 sprigs fresh thyme, 2 sprigs of fresh rosemary on the baking sheet. Add the fish on top of the thyme and rosemary. Sprinkle some fresh thyme over and around the fish, drizzle olive oil all over the fish.
4. Bake 12 to 15 minutes until the skin is lightly brown.
